The consumption of raw freshly cleaned vegetables, in addition to a simple salad dressing, is nature's multivitamin — high in vitamins, especially vitamin C and E, and lycopene (an anti-aging nutrient).

Many studies have found greater health outcomes in people who eat a daily salad. The dressing matters too: extra virgin olive oil helps your body absorb the fat-soluble vitamins.
